Our Dairy Products

All of our products are hand made from our cows whole milk, which is processed and chilled on the day of milking.  As well as milk, cream and yogurt we hand make a range of soft and hard cheeses.  Everything is made from the freshest of milk from our own herd of cows.

Milk

Our milk is processed as little as we can.  It is simply pasteurised on the day of milking to remove any harmful micro organisms.  It is not homogenised.  This means that the cream rises to the top like traditional milk.

Cream and Creme Fraiche

Our cream and crème fraiche is made from our cows whole milk and is done on the day of milking.  Our extra thick cream and double creams are creamier than most double creams.

Natural Yogurt & Pouring Yogurt

Our natural yogurts are as pure as can be.  They are made from our fresh, whole milk. To make the natural yogurt, we simply heat the fresh milk and add live cultures, before straining it to draw of some of the whey.  This creates a thick, creamy yogurt.  No starch or thickeners in our yogurt! The Pouring Yogurt is unstrained and is a little more tangy.

Fruit Yoghurt

Our fruit yogurts are made with our natural yogurt along with either a fruit compote or lemon curd. They are available in several flavours, some as yogurt ‘toppers’ with others being mixed with the compote.

Ice Cream & Sorbets

Our dairy ice cream and sorbets are made on the farm from our own fresh milk and cream. Both are available in 500ml tubs all year round as well as in cones or tubs during the summer months.

Butter

Our fresh butter is hand made by churning our smooth double cream and adding a dash of salt. We also make an unsalted butter with no other ingredient than double cream.

Probiotic Drinking Yoghurt

Our probiotic drinking yogurt is a fermented milk drink bursting with friendly bacteria. Made to be pourable, it is available as natural unsweetened or as a fruit yogurt in a variety of flavours.

Milkshake

Our milkshakes are made with our fresh, whole milk. They are a naturally healthy shake with no artificial colours, preservatives or artificial flavours.

Hard Cheese

We make three hard cheeses – Blackwater, Roding and Chalvedon.  All are made with our fresh whole milk.  They are handmade in small batches once a week and matured for at least 6 weeks before they are ready.

Soft Cheese

Our Bure’s and Essex Soft cheeses are light and fresh.  Made the day after milking they are ready to eat fresh after 5 or 6 days.  Our ‘Cam’ soft cheese is ripened for an extra two weeks to give it a hint of Camembert.
